In that case
To run GTAV or RDR2 on Mac, neither the free wine-crossover wine nor the game porting toolkit that can be installed with Heroic work. The only option that works on Mac is to use the commercial version of Crossover.

Install CrossOver. Once it's installed, Heroic will find it & you can select it in the "Wine Version" dropdown in the game settings

You can use the trial until the trial period runs out. After that, you'll have to purchase the full version

I assume you're referring to WineBottler? The two are similar in functionality, although WineBottler is ancient
Not to my knowledge. Could use cloud gaming services, although the free tiers of those are usually also rather lacking
