Any advice on how to dress with style in winters as brutal as in Canada?

the answer is layering. optional thermal layer, base shirt, sweater, coat, scarf. pants I find you can get away with just pants and a thermal layer underneath if it's truly incredibly cold. boots for the snow.
scarf to protect your face if you have to walk in the cold.
Also I meant this kindly but as a Canadian who also likes night life what I do is bring my thermal layer and then put it in my side bag, but the real answer is that you kind of have to tank it
Coat check
In Toronto, a Parka is a safe bet for worst of the weather. People get by with a Down Jacket most of the time. You'd deposit it in the coat check regardless once indoors.
Vancouver/ Montreal requirements will differ depending on how long you're waiting outside bars.

But also I don't particularly care about being fitted up in the club
Yeah, I was about to add depends on how the OP commutes and the need to stay outdoors. Public transit and waiting for street cars will be a different game in Jan/ Feb vs. Uber/ Car.
In the latter case - dress up as well as you want
Also "Canada" is not all encompassing. Montreal in the winter is not Vancouver is not even Toronto .
Realistically, you're going to want the ability to wear a big ass jacket on those real cold days. When it's hitting -20, looking fitted isn't important. Most places will have a spot to stash your jacket: Coat check, the merch table, a hook in a corner, waiters will take it, etc.
