Self Hosted Server, tips and advice?

FabricI've started getting serious on running a server via Crafty Controller on, which is similar to most hosts services I've paid for so everything is very familiar to me, however I am running crafty through Truenas Scale which makes me concerned I'm doing some things backwards.
If you guys have any tips in general I'm all ears, but my current head scratcher is regarding Chunky.
My CPS fluctuates like crazy (from 19 to 80), I've allocated 8GB of ram to my instance as I don't see a need past that for a Vanilla-like Fabric server for 20 players.
I've allocated 5 cores of a I7 9700 for the server also, mainly for multi threaded performance mods.
I had a terrible experience with C2ME, which throttled me down to 4/5 CPS for some reason, it seemed to do the opposite of it's intent.
If anyone has any experience with this issue, I'd greatly appreciate any advice. Thank you kindly
