Ah if you want to send from Cloudflare would have to use functions and an email service that supports sending emails via a HTTP API.

That has a very big impact. The nameserver determines what dns values to use. If your nameserver isnt set to cloudflare it wont use what you put in cloudflare dns

You can reduce your security level in your domain's settings in the Cloudflare dashboard iirc

You can see Under Attack Mode in the overview tab, or if you go to Security -> Events you can see which a specific request was challenged
