Tare you actually getting the beta updates? the changelog beneath the software updates block is not going to ever really be accurate to what you're getting

Tif your only indication about getting beta software is from that changelog, there isn't enough to show that you are in fact getting beta software

TI would also defer to Lutris for this for now. Heroic is best for the stores that it supports directly: EGS, GOG and Amazon
FI update the Bazzite for latest, and update for latest testing and i have broken Temp and usage on Lenovo Legion Go

Land should I pick the deck or desktop image ? Is the fact that there is no "Game mode" in the desktop image will break something ?
Kgame mode is specifically the gamescope session, so desktop lacking that simply means it acts like a normal desktop install of steam on KDE/GNOME

KHDR only works in game mode ATM, but the next release of KDE will support it via a vulkan layer

KDEs are best part of the image, if you don't want GNOME or KDE my suggestion would be to fork
