I think I'm finally set -- got games working, pretty clean install, jellyfin seems to work, very snappy and smooth experience. Other than an issue with gaming mode and I haven't tried the PS5 and Steam controllers yet, I think I'm set now.

PS5 controller worked perfectly. And I can't find my dongle for my steam controller so I guess it wasn't that important. lol

so looking at your controls, i see xbox glyphs. my guess would be that hhd, the controller emulator that ships with bazzite, somehow got disabled
