Sure, it can be done with CH32V003. All you need is plenty of GPIO Pins for buttons and I2C Pins for OLED Display that's all. Firmware is also very simple. I'll drop the circuit & code later today in case you wish to review. I skipped some capacitors in my case to avoid hand solder.
