You said, "at the same time". Of course, you can access the memory from two peripherals. You need to implement a circular buffer or similar memory structure. Ask @Umesh Lokhande or others for the best implementation practices. The HW side is safe here.
Yes, these courses are quite expensive. I am not typical PCB layout engineer at my Job, however I do some personal projects. If this goes in thousand's of €s then I probably skip.

While I tend to agree with this, this is something that is to happen eventually in a 12-15 year horizon. Maybe just like people are adapting to EVs now. Diversifying with the topics we learn, trying to relate one to another will help? This will require lot of time to be put from one's side to tap into little of many things around and go deep into one whenever required. Just like investment portfolio diversification while there is volatility and eventually it will settle at a point which is fuzzy now but obvious then. Curious to know what ya'll think!
I am bit afraid how AI to reaching various domains. There are already various tools for SW or FW development one for an e.g gitHub co-pilot and many more. AI can target HW development too, just imagine AI tool which can go through all the spec sheets of the ICs and reference designs, can design a system, incl PCB layout.

AI tools will surely increase productivity but are not likely to replace engineers anytime soon. The design and development of h/w, s/w involves creativity & human aspects for end users. Apart from this today's embedded systems are very complex, and expect a lot of customization, and optimization with a high degree of reliability and safety. So AI tools will surely help engineers in the process of design and development
