Of the two I would go for STM32 over ESP if you're considering commercial development. Also, the best way is probably to dive in but course 1 sounds like a good place to start if you need to start at the beginning.

yeah i have completed the course 1 ,got used to embedded c , in next few months i will complete rest of the course which hopefully be enough for letting me develop custom firmware .

If you know what Chip they use, focus on that chip and learn it inside out. Specializing often ends up giving dispropotionate results.

They are using atmega 32 , but currently there are better option in the market so I am looking forward in generalising firmware development instead mastering a particular chip
