DI heard that gamemode was readded in 3.5.0. Is there a benefit to using it now in bazzite?

LI am thinking of trying bazzite on my steam deck. Is it possible to go back to SteamOS, i didnt find any iso. Also is it possible to have Luks encryption with steam deck (make it work with the touch screen)?
