In the past I had posted an idea about a concept of something like a self-managed worker. Where there is some code running within the worker which returns a token, required to update that worker code. So basically you could implement whatever logic you need (some kind of auth, proof of ownership / etc) that gates the update.
We'd still have our users take some manual action to opt into the latest version of our software, which would be available for them to audit and review.
