Intermittent 520 errors on HEAD requests via cf

Last night around 22:00 UTC we started seeing intermittent 520 errors to one of our domains. I can't see any changes we made that could cause this.
It is totally fine in the UK where my origin is. But the further away from that you get, the more 520 erros happen (stockholm ~10% rate, LA ~50% rate, etc)
GET requests work fine. Also bypassing CF works fine with HEAD and GET.
Strangely when it errors the cfOrigin value back is 0ms. Which seems strange.
anyone got any ideas on how we could try and fix it?
