Yeah, im wondering if something on their end screwed up, still flagging the entire account as "already has an owner"

I assume you are using the netbird service, and not self-hosting. If thats the case, then you might have to contact their support. The way it works is the first person to sign up with @yourdomain.com becomes the admin, and then if a different email is used to sign up after the fact, but the same @yourdomain.com, then they get registered as a User.

I guess would need more information about the setup (Where is the server hosted? Is IPv6 enabled on everything? Where are the devices and server relative to eachother?)

Then i think you would have encryption all the way(Netbird to encrypt from Devices -> DNS Server, then DoH from Technitium -> Adguard instance

Circling back, you should set up a forwarder server that you can use for your DNS queries (like technitium or similar), then do DoT/DoH from there to your adguard instance.

Also, the point of DoH/DoT is to encrypt the DNS request packets, but if they are going through netbird, then they are already encrypted
