Jsigstore/cosign is the defacto signing method for containers so we reuse it

Eakmods and nvidia 530 images aren't building right now. I spent a few hours going through the logs yesterday but didn't find anything that stood out to me. I'm pretty sure it is something upstream

E6.3.6 includes a fix for the Nvidia black screen issue iirc
