You would have to live with these non-Proxied warnings for any non-HTTP traffic, such as e.g. mail servers.

You can however take some security by obscurity way, and replace the "internal" part from the "@internal.example.com" example above could be some very long and random string.

A such approach would however (also) complicate your outbound stream from your Plesk, as it would somehow have to rewrite / remove it when sending messages out as well.

You set MX Records per hostname, either mail goes to Zoho, or Cloudflare for your root domain, not both. Some mail providers have full mail forwarding (not email forwarding) like gmail where they can forward mail onto a diff mailserver, but afaik zoho doesn't, and even if it does, it's a bit hacky.
You could be able to setup email routing on a subdomain

hm the Settings Page says if the domain is disabled, subdomains won't work either

Yea for sure. Some aren't too hard to guess though, if there's no specific permission for it (like "Email Routing" exact), then I would assume it would fall under generic Zone Settings, not a great experience though

Email Routing doesn't allow you to send Emails(via SMTP), only receive them, if that is what you mean.
