FYI: As of the latest update the Steam OS branch selector works.
By default this shows Stable, Beta, and Preview. Stable is 
:latest
 with stable Steam client, beta is 
:latest
 with beta steam client, and preview is 
:testing
 with beta steam client.

If you enable advanced update channel, just as on SteamOS, additional options appear. These are (and map as the following):
Stable (

)

Beta Candidate (

)
