SI was running plasma on Wayland, I noticed after switching to gnome yesterday I could do one screen at 1440p 60, one 1080p 60 and that wasn’t possible before.

PTypically each entry in Lutris has its own wine prefix. If you are creating it manually then yeah just point it to a blank folder relating to the entry

This will only disable middle click to paste for GTK apps & I'm not sure if all GTK apps respect this. I know that terminal does.
For KDE, I don't know.
Electron/Chromium requires manual intervention afaik. Some allow you to configure this, some don't.
For Firefox, go to about:config & set this to false:
