does anybody know how to change the HDR settings on wayland from either command line or an X11 session? I'm pretty sure if I can turn HDR off, I can use wayland on my nvidia gpu but it's "stuck" in HDR mode from before I upgraded to 555 drivers

As Satlen said you can use kscreen-doctorkscreen-doctor
kscreen-doctor -okscreen-doctor -o shows you the list of outputs and their names (which you need to configure the display)
kscreen-doctor output.<OUTPUT NAME>.hdr.disablekscreen-doctor output.<OUTPUT NAME>.hdr.disable disables HDR in theory
