actually: when creating a wildcard worker route, you do need to create a record with any IP address first so that the DNS resolves for the domain, the example uses

192.0.2.1

192.0.2.1

which is an IP address that routes nowhere and is safe to use as a fake origin to put an originless worker on top of

Asssuming that the email address itself has been verified, I guess? You can't send to arbitrary endpoints from within the Worker itself though

For something like that, you will have to make the Google Workspace run at another address than the Email Worker (e.g. john.doe@google.example.com
john.doe@google.example.com
), and then point the MX for google.example.com
google.example.com
to Google, and then make the Email Worker forward (e.g. from whatever@example.com
whatever@example.com
) to john.doe@google.example.com
john.doe@google.example.com
