I learned that Lewis acids are identified by having vacant orbitals, but doesn’t every atom technically have infinitely many vacant orbitals?

Vacant orbitals means the orbitals that are energetically low enough to participate in a reaction The electron donor species will have those electrons in its HOMO Highest occupied molecular orbital Which would donate to the LUMO Lowest Unoccupied Molecular Orbital The gap in those shouldn’t be very high
