one option is to symlink each of the directories to a different mount point
So in the uploads folder you have these
encoded-video immich_upload library thumbs upload
you could, for example, do ln -s encoded-video /mnt/foo/bar

There are other options like tail scale, cloudflare tunnels, or a reverse proxy that could make this easier or more secure. But just port forwarding also works

You should try manually assigning it a path in fstab

I've just had issues with backups completing with duplicati in the past

So why is your media directory moving?
Also this looks like you're trying to start a docker container while it's already running? You have insight on that?

I personally would recommend duplicacy over duplicati
It's not free (at least the GUI version isn't free)
But it's inexpensive and I've found it far more reliable than duplicati
