Gamescope tends to be smoother but there is nothing stopping you from running a game in gamescope on desktop mode and for some games i actually do that due to minor bugs when running without gamescope.
In the end the differences is marginal unless you're resource constrained for the game

HIf it was on a non atomic system it's easy, I'm not familiar enough with ostree to say if a normal chmod from a live system will let you password reset or not
