Some odd things about your settings. First, with the Fan start temperature at 33 and end at 50 it is not surprising, that the fans turn on. You can easily expect an idle temp in the high 30s in a gaming session. So far so good.
Second. 100% spring is a lot. You are most likely overpowering the motors in the heat of the battle. Try to have the stats on top and see what kind of amps they are pulling when flying those Aircraft (supposedly in a Dogfight). Adjust your spring so you don't exceed maximum amps at maximum deflection.
Also with the telemetry up, see what temps you reach before the motors quit.
