If you want the shader to still have full quality shadows on DH LODs - enable DH shadow map - increase shadow range/render distance - increase shadow resolution...

Shadows completely disappear when disabling Virtual Shadow Maps in Taj's Graphical Overhaul

That's because Virtual Shadow Maps act as a replacement for other shadow types. Without re-enabling those other shadows in Taj's settings, you will indeed have no shadows. VSMs are also, indeed, quite resource intensive.
