and build out folder structure in there, and then when the UI needs shared stuff it can be a bit more configurable to watch code in the functions folder

If you look at the deployment in the dashboard there's a functions tab that should provide some more info on what wrangler inferred as far as routing goes

I see that I can develop locally but connect to remote KV using:

I checked in Network tab, you are right, it's the browser adding that HTML around the response.
Not sure what it needs to detect in the response to not add it (doctype? valid html didn't seem to do it...)...but will not pursue this path right now.
