I have Ubuntu installed along with windows dual booted on my Dell Latitude e6410. After the 24.04 update Ubuntu crashes a few minutes after booting. (screen freezes, mouse locks up, no HDD activity).

Dthat kinda sounds like you need something like log-messages so you can monitor dmesg in between boots
Dlook into see if rsyslog is an option for you, we use that at my work to diagnose machines that tend to crash randomly with our software, it writes to /var/log/messages whatever you configure it to write, we have it setup to write dmesg logs
Dregular dmesg i think gets wiped in between boots
